Baked Permit

Try this simple and easy recipe:


2 (4 ounce) permit fillets
1 yellow onion, diced quarter inch
1 zucchini (cut into quarter inch pieces)
1 summer squash (cut into quarter inch pieces)
2 T. extra virgin olive oil
½ cup Italian breadcrumbs
1 T. Adobo or Sazon herb seasoning mix
1 teaspoon oregano
1 teaspoon salt
1 teaspoon pepper

In a sauté pan, add two tablespoons of extra virgin olive oil over medium high heat. After two minutes of sautéing, add the zucchini and summer squash. Sauté for approximately two more minutes, then add one teaspoon oregano, one teaspoon salt and one teaspoon pepper. Transfer fish to baking sheet or shallow pan. Brush with olive oil or butter, season with Adobo or Sazon and then lightly sprinkle Italian breadcrumbs on top of the fillets. Preheat oven to 425 degrees, and bake for approximately 20 minutes depending on size and thickness of fillet. sPlate the baked permit fillets over the vegetables and serve!
